The Wüsthof Classic Ikon Santoku 17 cm is a small traditional Japanese chef's knife with a decent German design. The word Santoku means "three qualities." According to some, this refers to the cutting, chopping, and hollowing qualities for which santoku is known. Others say it means meat, fish and vegetables. The three food groups that can be easily cut with a santoku. What we do know is that a santoku is an incredibly versatile kitchen knife, perfect for cutting, mincing, and cleaning meat, fish, and vegetables.

As in other Wüsthof collections, the blade is made of X50CrMoV15 steel, sharpened according to the PEtec method and polished by hand. This type of steel is also easy to sharpen.
Another advantage of this blade is the cut. It does not extend to the edge, but it does separate the handle from the blade. This way, you will not only keep your fingers safe, but you will be able to use the entire edge. It is also ideal when you want to sharpen your knife.
