The chrome vanadium steel (X50CrMoV15) blade is forged from a single piece of steel. It is sharpened according to the Wüsthof PEtec technology. This means that for each blade the sharpening angle is determined with the help of a computer. It is then precisely honed on a wet whetstone. After a thorough inspection, each knife rolls off the production line, ready for a lifetime of heavy use.
Wüsthof processes the steel in a specific way to ensure that it has a high hardness of 58 Rockwell. Thus, the knife retains its sharpness for a long time.
